I love anything with nuts in them, really, I do! A handful of almonds is becoming one of my favorite go-to snack as I work towards maintaining a healthier lifestyle.
But as of right now I’m still loving some good ol’ sweets, breads, muffins and pies!!! I just might be a baker at heart!
But I digress, I actually want to talk about nuts…
No, that’s not right 🙂
…ah, yes, MUFFINS!
Banana NUT muffins to be exact! They’re delicious, and may I add they are perfect for breakfast! As a mom with a baby on the move I need the kind of breakfast that doesn’t require a lot of preparation in the morning. You know, cereal, fruits, uh…cereal! Obviously, I needed a change so I baked the beauties you see below one morning and ate them for breakfast throughout the week. Umm, umm…GOOD!
Ingredients
3-4 – Ripe Bananas (smashed)
1/2 cup – Unsalted Butter (melted)
3/4 cup – Sugar
1 Egg (beaten)
1 Tsp Vanilla
1 Tsp Baking Soda 1 1/2 cup – Flour 1 cup – Chopped Walnuts Salt (pinch) |
Prep / Cook Time: 15 min / 25 – 30 min (Makes 15)
Preheat oven to 350 degrees F.
Bowl 1:
Mix melted butter into mashed bananas.
Mix in sugar, egg and vanilla.
Bowl 2:
Add flour, mix in baking soda and salt. Add the ingredients from Bowl 2 into Bowl 1. |
These bad boys were quick and easy, moist and delicious! You should definitely give ’em a try!!!

I love banana nut ANYTHING! Now I want to go home and make them.
When we have bananas in the house that are about to go bad I take them, peel them, and freezer. I have a bag of bananas in the freezer so I can make banana bread, muffins, or banana soft serve whenever I want.
