I love snacks!
I’m sure you’re not surprised considering my addiction to sugar. But these peanut butter granola bars consist of wholesome ingredients like unsalted almonds, oats, coconut oil, etc. so I don’t feel as bad when I grab one, or two :), for my midday snack!
I also love the simplicity of this “no-bake” recipe! Oh…and they are absolutely delicious too, especially considering the fact that I didn’t like granola bars until I made these. That should tell you something!!!
1 cup 100% peanut butter
2/3 cup honey
1/2 cup coconut oil
2 cups oats
1 cup unsalted sunflower seeds
1 cup unsalted sliced almonds
{or 2 cups of your own combination of nuts and/or dried fruit}
Chocolate chips – to sprinkle on top

Instructions
- Over low-medium heat, melt together peanut butter, honey and coconut oil.
- Remove from heat and add oats, seeds, and almonds. Stir well.
- Press mixture into an 8-inch square baking dish and sprinkle with chocolate chips (while still warm), slightly pressing them into the mixture.
- Chill for 2 hours (or overnight) in fridge and cut into bars.
Note(s)
- The peanut butter has a tendency to melt so keep refrigerated.
- The batch I made yielded 12 bars; however, you can cut them as big or small as you prefer.
