Wait! That’s a lie…I thought I had black beans in the pantry and I didn’t! So in the middle of cooking I had to run to the store to grab some. Don’t you just hate that!!!
Luckily, since we eat a LOT of brown rice I didn’t have to make any as there is about 4-8 cups of cooked rice in our fridge at any given time. I simply had to brown/season the meat, add in the beans/corn and stuff ’em!
These pretties were ready right in time for my Grey’s Anatomy/Scandal showtime. I also had some apple crisp and ice cream that night to top things off. Color me plump! Thursday’s just became the best night ever, once again, thanks to these shows and good food!
I hope at least one of your weeknights is just as much fun! Give these a try to change things up a bit…
- Preheat the oven to 400 degrees Fahrenheit.
- Lightly coat the peppers with olive oil and roast in a baking dish about 20-25 minutes.
- Brown the beef, drain any grease and set aside in a bowl.
- Add the taco seasoning, chopped onions, black beans, corn and rice.
- Add in the jar of salsa and mix well.
- Spoon the beef mixture into each half of the bell peppers.
- Cook the peppers for another 15 minutes.
- Sprinkle the tops of each pepper with shredded cheddar cheese.
- Place back into the oven just until the cheese has melted (~5 minutes).
- Remove from the oven and top with fresh cilantro and/or sour cream or whatever else your heart fancies with this dish…just before serving!

I've tried this recipe once before and it was a pretty tastie treat. Too bad it doesn't have enough protein and carbs for the boo! And you're right…it's that time of year where you have to make sure that you have something already prepared so cooking dinner doesn't interfere with watching shows!
