It’s officially soup season! Okay, that’s not a thing. But, the temperatures in NC have definitely dropped this week, and all I’ve wanted to do is stay snuggled up in the house and eat comfort food. So today I’m sharing a quick and easy crockpot recipe for you to make this weekend and it includes just a handful of ingredients. Since it’s a crockpot meal you get to set it and forget it, then come back to a heavenly aroma once it’s ready! Plus, it’s sure to be a kid-pleaser since it’s packed with milk and cheese.
Besides, I know you’re eyeing all of that bacon. So what are you waiting for? Fry up that bacon and get this in the ‘pot…right…now!
Ingredients:
2 Diced onions
3 1/2 Cream of Chicken Soup
1 Cup milk
1 1/2 Cup evaporated milk
2 Cups cheddar cheese
Salt and pepper to taste
Bacon as a topping
Directions:
Place all the ingredients except for the cheese in a slow cooker. Cook on low for 6 hours. Add the cheddar cheese and cook for 1 more hour.
Place the soup in a blender and pulse for 30 seconds or until everything is well incorporated. Add the salt and pepper to taste.
Serve and top with some crispy bacon.
